Cactus party!

Recently I had the great pleasure of hosting two lovely couch surfers from Florida who are making a cross-country bicycle trip. My friend Matt spontaneously decided to visit from Washington on his motorcycle at the same time.

Chad's unique cactus skinning method involved a hammer, a knife and scissors

Chad and Jackie wanted to harvest and eat some cactus, so harvest and eat cactus we did. I gave up after de-spining only one cactus paddle, as the numerous, tiny spines had somehow embedded themselves over my entire body.

This is way safer than it looks, trust me...

Chad, however, was more persistent, and was able to clean the whole harvest, skinning the cacti “like a fish”.

We made a cactus salsa with lime, cilantro and onion, and dredged the remaining cactus in egg, cornstarch and cornmeal. The salsa was slimy and mucilaginous. The fried cactus was crunchy on the outside and slimy and mucilaginous on the inside.

Neither Jackie nor Chad had fired a gun before. Matt set that to rights.
